🌱 From garden to table—right at school!

At the Hill Campus, students are experiencing the full journey of food grown just steps away from their classrooms. Through paid internships, students have helped plant, tend, and care for the Hill Campus garden—gaining hands-on experience and valuable job skills along the way.

Now, paid student interns are harvesting the fruits and vegetables and that fresh produce is making its way into the school cafeteria and onto the lunch line! 🥕🍅🥒

Students get to see their hard work come full circle as food grown in their school garden becomes part of meals served to their classmates.

It’s a powerful connection between agriculture, career readiness, healthy food, and community. 🌿

Lessons at Hambright Elementary are off to a great start this fall! 🌱🍅🥔

Students harvested potatoes straight from their school garden, then chopped and diced them, added herbs and green peppers, and turned their harvest into a delicious home fries treat!

They’ve also harvested tomatoes, peppers & onions to make and taste fresh pico de gallo—all while exploring how climate and a crop’s place of origin influence where and when our food can grow. 🌎 Students learned about the origins of tomatoes in Mexico and compared Mexico City’s growing conditions with our growing season here in Pennsylvania. They also investigated how an onion’s structure helps it survive the challenging climate of its region of origin.

From investigating plants in the garden to preparing and tasting the food they grow, students are making connections between food, culture, climate, science, and the environment—all through hands-on learning!

Burrowes Elementary School has been a longtime partner of The Edible Classroom and we’re so excited to grow alongside them in their beautiful new school! 🌱

With a new building comes the opportunity to create something special: a brand-new school garden where students can learn, explore, and grow together.

Today was Day 1 of building the new Burrowes school garden with the students and they jumped right in!

Before filling the raised beds, students put their math skills into action—measuring the beds, exploring volume, and calculating just how much soil they’ll need to fill them. Students also learned how to safely use a drill, practicing driving screws into wood. Talk about an empowering experience!

This is what hands-on learning looks like: students applying classroom concepts to a real project that they’ll continue to learn from, care for, and enjoy throughout the school year.

A huge thank you to PPL Electric Utilities and GIANT for investing in projects that strengthen our school communities and create meaningful, hands-on learning opportunities for students. đź’š

🌱 Student Interns Growing More Than Just Produce!

Two of our paid student interns are gaining valuable hands-on experience!

Today, they harvested 43.5 pounds of tomatoes, cucumbers, zucchini, summer squash and butternut squash from the Hill Campus garden!

This produce is headed to the Hill Campus cafeteria, where it will be transformed into delicious meals for students to enjoy at lunch. We’re so grateful for this partnership and the opportunity to bring fresh, garden-grown food directly to the school community. 💚

It was our first day back in the garden at Park Elementary School and students were excited to harvest the potatoes they planted in the Spring! Did you know, it takes 60-120 days to grow a healthy potato!?! They had plenty of growing time and students turned the activity into one big treasure hunt as they dug through the soil to discover how many potatoes had grown!

After harvesting, students had to opportunity to weigh and measure their potato. Bringing classroom learning in Math to life in the garden is just one of the many benefits of a school garden!

🌱 Fall lessons in the garden are underway!

We’re excited to be back in school gardens where students observe, investigate, harvest, cook, taste, and learn about so much more than gardening!

Hamilton Elementary School students…

🌡️ Explored how temperature and changing seasons affect plant growth by comparing warm-weather corn and cool-weather spinach.

🥔 Harvested potatoes, then used their math skills to weigh their harvest. Every student took home at least one potato to share with their family!

👩‍🍳 Became chefs in the kitchen by preparing homemade home fries and exploring flavor, texture, and new foods.

🌎 Discovered the history and origin of potatoes- the Andes Mountains of South America!

How many potatoes did these hardworking students harvest? Hint: We harvested potatoes from two, 4 x 8 raised beds. Comment below!

✨Back to School Night at the Hill Campus!

We’re excited to welcome Hill Campus families back to school! Be sure to stop by the garden this afternoon and see what’s been growing all summer.

🌿Garden Tours | 3:30–5:30 PM
Follow the bucket planters around the back of the school to find us!

🥕 Take home fresh produce!
Free produce grown and cared for by our Hill Campus paid student interns will be available for families to take home.

🥔 From Garden to Table!
Then, head inside to the lobby to see garden-to-table in action! Potatoes grown right in the Hill Campus garden were harvested by student intern, Reneudi, and provided to CBSD Food Services, who turned them into a hot potato dish for families to enjoy tonight!

A big thank you to Columbia Borough School District, Columbia High School/Middle School Hill Campus and Penn State Health for helping make these opportunities possible for Hill Campus students and families!

We were thrilled to be part of Fulton Elementary School’s Back-to-School Night and celebrate the expansion of their school garden! 🌱💚

With generous funding and support from Penn State Health, families had the opportunity to get their hands in the soil—filling grow bags, planting cabbage and taking them home to care for and harvest later this season! Tasting herbed butter with crackers was a hit too!

Thank you, Fulton community, for the warm welcome! We’re looking forward to garden-based lessons in just a few weeks! 🥕

What a summer of growing, learning, and digging in! 🌱

With generous support from the Lancaster County STEM Alliance, school gardens across our community stayed busy this summer- creating opportunities for young people to gain meaningful work experience, explore STEM, and get their hands in the soil!

Through our partnership with the School District of Lancaster McCaskey FFA - Agricultural and Environmental Science Program, paid student interns Valerie and Kaskile helped keep SDoL school gardens growing and thriving all summer. Fellow intern, Cal, joined our summer programming team at Lafayette Elementary School and Wickersham Elementary School, where Lancaster Rec campers gardened, harvested, prepared, and tasted garden-fresh snacks they made themselves! 🥕🍅

We’re so grateful to the Lancaster Recreation Commission for their warm welcome, enthusiasm for garden-based learning, and partnership in bringing these experiences to their campers!

Our summer garden learning continued in the Columbia Borough School District, where paid student intern, Sarah, cared for the school gardens at Park Elementary School and Columbia Middle School-Taylor Campus while our Garden Educators brought hands-on learning to students in Park Elementary’s Extended School Year program.

We are deeply grateful for the beautiful community that makes this work possible. Thank you to all of our partners for your collaboration, support, and shared commitment to growing hands-on learning experiences for students across Lancaster County.
