What is Wagyu?
While many believe Wagyu is a breed of cattle, more appropriately Wagyu
refers to the cow's origin, not breed. Wagyu in the literal sense means
Japanese beef cattle. Akaushi, commonly referred to as Red Wagyu, is a
specific breed of Japanese Cow. This breed naturally contains intense
marbling. This rich marbled texture ads to the palatability of the beef,
however it is the high concentration of monounsaturated fats that truly give
this breed such rich flavor. These elevated levels of monounsaturated fats,
when compared to other beef in the US, give Show Me Akaushi (Red Wagyu) beef its rich buttery flavor and help it maintain a tenderness and juiciness
throughout the entire cut of meat. In addition to the mouthwatering flavor,
the higher percentage of monounsaturated fats relative to saturated fats offers extraordinary health benefits including the lowering of cholesterol, prevention of heart decease and can lead to weight loss. Not too shabby for a primo cut of beef.
