What's for Dinner? Tonight was tuna wraps and a cauliflower blt salad. I always keep walmarts real bacon bits on hand for nights like these. Grocery day produce is nice and fresh so I try to use these right away because they will only last so long. My plate cost 2.37 and there will be leftover salad for lunch tomorrow so that's less than 10.00 for a family of 4 for something a little healthier.

Today's Walmart budget meal $5.16 made a lot! It was a little more work and time consuming. I found out you can buy a marked down cold rotisserie chicken for just a couple dollars in the deli. Boil the whole thing for bone broth and you get a lot of meat off it also being a whole chicken. This could be done in a crockpot to make it a little easier. Pick most the meat off first then the bones out to cool down to pick any extras off. While the bones are cooling add the noodles and cook and after they are done - thicken the broth with the two cans of cream of celery and then add all the meat back in. I have enough for two meals so I will most likely add a package of frozen mixed vegetables(which are usually around 99 cents) to stretch out the leftovers for a second day making it a little different for the second go around.

Today's budget meal came from dollar tree. I boiled the macaroni and drained it. Fried the sliced smoked sausage in the same pan. Microwaved the broccoli 5 minutes and added it to the smoked sausage and stirred it around to heat any excess water off while still browning the sausage. Added the cooked macaroni back in and added the cheese sauce packets. I would make this again for real - very tasty.

Today's budget meal came from dollar general. I liked the idea that the rice had the peppers and the Cajun seasoning in it. I had also heard this bagged frozen chicken for 3.00 was good and it was - I just wish there was a little more of it. It was a little spicy but I had some flour tortillas and shredded cheese so I made some Cajun chicken rice tacos out of mine. I would make this again and get a second bag of chicken if I could scrape up the extra money.

Today's budget meal came from Daily Deals. I made a pasta dish using some boca vegan protein crumbles. I was a little leary about the fake meat but then thought what if about 5.00 was all you had? The grain based meat crumbles had 21 grams of protein per serving. I boiled my pasta then crumbled the meat into the pan and added the zesty sauce plus a can of water to thin it out and tone down the spicy a little. I ate my bowl with parmesan on it because I have a big container that is approaching it's expiration date and needs to be used up. My nephew said the meat reminded him of the meat in beef ravioli. I think kids would eat this and not even realize it's not really meat. 5.27 was my total and it made a big pan.

Tonight's budget meal is from Aldi's. I originally was going to make a fry pan hash but found baking it as a sheet pan meal would be more convenient. Baked the chopped up sweet potatoes for 1 hour and a half at 350 degrees. I drizzled olive oil over the potatoes and shook a chicken rotisserie seasoning I had over. I browned one package of the turkey sausage in a fry pan to get some color on them and added them at the end. Under 5.00 but I think next time I will get a cheap frozen bag of green beans to stretch it out more and add some color. This time of the year - a whole bag of sweet potatoes for 2.29 is such a good deal.

Had a big holiday meal last Sunday and there were leftovers for days that I had to use up so it took me a minute to get back to the budget meals. This meal was from Menards. A chili cornbread bake. While the 2 cans would have worked - it would have been awful thin. I added another can of jalapeño chili from Ollie's that I purchased for 1.99 and sprinkled half a cup of cheese out of a big package in my fridge adding another .44 cents. My picture of the ingredients did not come out but on the receipt it was a can of chilli, can of chilli beans, and a Martha White cornbread mix that you can mix up with water only. Grand total for the whole meal came to 7.55 which was a little more than I originally wanted to spend.

Today's meal was from Family Dollar. I spent 5.55 on all 3 ingredients but only scrambled 6 of the eggs and saved the rest for later. Scrambled the eggs first then set them aside and cooked the fried rice packets according to the package directions and stirred the eggs back in at the end. The packages did call for a couple tablespoons of some margarine . I also added a couple shakes of some soy sauce I had in the fridge.
