Spiced Chocolate Chip Pancakes for Two

Ingredients
* 1 cup Pancake Mix (e.g., Bisquick, Kodiak)
* 1/2 tsp Ground Cinnamon
* 1/8 tsp Ground Nutmeg (or a generous pinch)
* 2/3 cup Milk (or buttermilk for extra fluff)
* 1 Large Egg
* 1 tbsp Butter, melted (or vegetable oil)
* 1 tsp Vanilla Extract
* 1/4 cup Chocolate Chips (semi-sweet or milk)
* Butter or oil for the pan
Instructions
1. Mix Dry Ingredients: In a bowl, whisk together the pancake mix, cinnamon, and nutmeg.
2. Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla.
3. Combine: Pour the wet ingredients into the dry ingredients and stir just until combined. Lumps are okay; do not overmix.
4. Add Chips: Gently fold in the chocolate chips.
5. Cook: Heat a skillet or griddle over medium heat and grease with butter or oil. Pour 1/4 cup of batter for each pancake.
6. Flip: Cook until bubbles form on the surface and edges look set (2-3 minutes). Flip and cook for another 1-2 minutes until golden brown.
7. Serve: Serve immediately with syrup.

* Avoid Sinking: If your chocolate chips are sinking, toss them in a teaspoon of flour before adding to the batter.
