Wrap up the workweek with a win! 💪 Serve up this wholesome, perfectly balanced Grilled U.S. Catfish and Zucchini Noodles dish for a healthy family dinner.

RECIPE ⬇️

4 U.S. Farm-Raised Catfish fillets or steaks
1 red onion, thickly sliced so that the rings stay together (1 inch)
2 ears of corn
2 zucchinis, run through a spiralizer
¼ cup cherry tomatoes, cut in half
1 tablespoon Dijon mustard
½ cup olive oil
1 lemon, zested and juiced
¼ cup green onions
2 tablespoons oregano, chopped
2 tablespoons sugar
Salt and pepper to taste

Prepare your grill. Drizzle corn with 1 teaspoon oil, and season with salt and pepper; wrap in foil. Lightly coat the red onion slices with a bit of oil, and place corn and onion on the grill. Turn every 2 minutes for 10 minutes or until done.

Drizzle catfish fillets with oil, and season with salt and pepper. Grill for 4 minutes on each side or until cooked through. When finished grilling, remove the wrap from the corn, and carefully cut corn from the cob. Cut onion into small bite-sized pieces.

In a small bowl, whisk together all ingredients for the dressing. Using a spiralizer, cut your zucchini using the smallest blade, and divide among four plates.

Top each with tomatoes, corn, and red onion. Top with catfish fillet, and then drizzle with dressing.

Looking for a snack with a little extra kick? 🌶️ Our Spicy Saltine Crusted Catfish Strips are the perfect grab-and-go small-bite!

RECIPE ⬇️

4 U.S. Farm-Raised Catfish, cut into strips
1 cup buttermilk
2 large eggs
Oil

CRUST:
1 box mini saltine crackers
½ cup vegetable oil
1 package ranch seasoning
2 tsp crushed red pepper flakes
½ cup grated parmesan cheese

Put crackers in a large resealable bag.

Combine ingredients for crust in a bowl, then pour over crackers.

Seal bag and shake to coat with mixture. Let sit for 30 minutes.

Place in a food processor and pulse into crumb mixture.

Heat 1-inch of oil in a large skillet over medium high heat.

Preheat oven to 350°F.

Combine buttermilk and eggs in a shallow bowl.

Coat Catfish strips in mixture, then coat in crumb mixture.

Cook strips 2 minutes on each side or until golden brown.

Place on a sheet tray with a wire rack.

Place in oven to finish cooking for 10 minutes.

Serve with lemon wedges.

RECIPE by Bitesbybrandy: Foil-Baked Catfish with Veggies and Herbs ⬇️

6 U.S. Farm-Raised Catfish Filets

12 oz of fresh green beans

1 zucchini, sliced

1 yellow squash, sliced

Fresh Oregano, to taste

Garlic Powder, to taste

Onion Powder, to taste

Creole Seasoning, to taste

Complete Seasoning, to taste

1 9oz package of cherry tomatoes

1 stick of butter, melted

1 lemon, sliced

1 yellow onion, sliced thinly

7-8 sweet mini peppers, sliced

1. Preheat the oven to 350 degrees F.

2. Season the US Farm-Raised Catfish with the dry seasonings.

3. Tear a piece of foil that is at least one inch wider on all sides than the catfish filet.

4. Place the seasoned catfish filet on top of the foil.

5. Layer the onions, peppers, veggies, and minced garlic around the fish.

6. Place 2-3 lemon slices on top of the fish.

7. Add the minced garlic.

8. Pour about a tablespoon of melted butter on top of the fish.

9. Fold the extra inch of foil down on each side of the fish.

10. Add another piece of foil on top of the fish and seal it on each side.

11. Place the catfish foil packet on a baking sheet.

12. Repeat Steps 2-11 for each catfish filet.

13. Bake the packets for 25-30 mins.

14. Remove from the oven and enjoy!

Crispy air-fried catfish nuggets + your favorite dips and sides = the perfect small-bite board for grazing. 🤭

RECIPE by Eating With Erica ⬇️

1 pound U.S. Farm-Raised Catfish, cut into 2-inch-long nuggets
¾ cup seasoned fish fry coating
Nonstick cooking spray
4 lemon wedges
1 cup of French fries
1 cup coleslaw
1 cup of salt and vinegar chips
4 slices of toasted garlic bread
1 ramekin of cocktail sauce
1 ramekin of tartar sauce
1 ramekin of hot sauce

Preheat an air fryer to 400 degrees F.

Rinse and dry the catfish with a paper towel before coating.

Add the seasoned breading to a shallow bowl, then dip each piece of fish until completely coated.

Spread out nuggets on a baking sheet and spray with nonstick cooking spray. Place nuggets in an even layer in the air fryer basket, sprayed side down.

Air fry for 8 minutes. Flip nuggets over and cook for 4 minutes.

Position catfish nuggets and all other ingredients on the board.
