I’ll be honest, cooking proper meals in a tiny camper van is not my idea of fun. Mostly because I don’t want to deal with cleanup. But embarking on this road trip I tried to strategize to prep and freeze as much as possible to make for easy meals on the road.

Some are super lazy. Some gourmet.
All met the needs of the day.
But the very best were meals shared
with wonderful friends along the way.

Nourish Bistro Banff nailed it with so many wonderful plant-based brunch options! We ordered way too many things because we simply couldn’t decide, and everything was delicious. Thanks for a respite from campfire cookin!!

In my annual search for new things to do with pounds of rhubarb, I found a recipe for rhubarb brownies. Sounded suspicious, but I figured I had nothing to lose. Other than needing to bake WAY longer than the recipe said, I was shocked at how good these turned out!! Such a subtle bright note, nice and chewy outside, gooey inside, very chocolatey.

Have you ever had a meal that changed your life? 20 years ago, a dear friend introduced me to Casa de Luz. For the first time ever, I tasted LOVE in my meal. I recently revisited for the first time in 10+ years and it is every bit as dreamy, magical, and delicious. Go to Austin and enjoy!!!
