Paris wasn’t always a paradise for food lovers.

Until the late 18th century, dining out in Paris was often disappointing and predictable. Then, French entrepreneur Mathurin Roze de Chantoiseau opened a new kind of establishment, introducing elements that were unfamiliar at the time—individual tables, crockery and linens, and the idea of offering simple, quality meals at fixed prices. These concepts offered diners more choice, comfort, and a reason to linger. Just as political upheaval began to transform France, this new egalitarian approach would influence how people dined far beyond the capital.
