Paris wasn’t always a paradise for food lovers.

Until the late 18th century, dining out in Paris was often disappointing and predictable. Then, French entrepreneur Mathurin Roze de Chantoiseau opened a new kind of establishment, introducing elements that were unfamiliar at the time—individual tables, crockery and linens, and the idea of offering simple, quality meals at fixed prices. Thank you to our friends at AATF North Texas, the Consulate of France in Houston, and of course, the Texas Foreign Language Association for your support in promoting the Texas French Symposium. It was a pleasure to meet so many passionate French teachers, department chairs and LOTE coordinators at this year’s TFLA conference. We thank you for your tireless efforts to ensure that French remains a priority in Texas schools.
