What Portuguese breakfast dreams are made of....Queijo Fresco (Fresh Cheese), Papo Secos and Coffee.
When in Portugal I always make sure to have Queijo Fresco in the refrigerator. When vacationing there, I buy it at the grocery store. When I am here at home, I like to make my own because you cannot beat homemade Queijo Fresco. I learned how to make fresh cheese from my husband's family. They were cheesemakers back in Portugal from Serra da Estrela, so I was lucky to learn from the pros. They use the method of pressing the cheese to remove much of the liquid whey which results in a firmer cheese that retains its shape / size and does not sour as quickly as cheese that is left very watery and could actually be ready to eat in a few hours, although I do like to let it sit overnight.
