🍋🥦 Easy Lemon Garlic Chicken & Veggies

💰 Budget-Friendly • 🥗 Healthy • ⏱️ 30 Minutes

Ingredients:

1 lb chicken thighs or breasts
2 cups broccoli (fresh or frozen)
2 carrots, sliced
1 cup rice
2 tbsp olive oil
2 cloves garlic, minced
1 lemon
1 tsp Italian seasoning
Salt & pepper to taste

👩‍🍳 Directions:

Cook rice according to package directions.
Season chicken with Italian seasoning, salt, and pepper.
Heat 1 tbsp olive oil in a skillet and cook chicken until browned and cooked through.
Add broccoli and carrots to the pan. Cook until tender-crisp.
Add garlic and cook for another minute.
Squeeze fresh lemon juice over everything.
Serve over rice and enjoy!

💡 Money-Saving Tip:
Chicken thighs are often less expensive than chicken breasts and are still a great source of protein. Frozen vegetables work just as well, too!
