Our first harvest is here, and it is more than just food from the ground.
This harvest included butter crunch lettuce, mixed salad greens, spinach, tatsoi greens, mustard greens, Chinese mustard greens, also known as g*i choy, and radishes.
Each one represents the care, patience, and purpose being planted at the UCF Urban Teaching Farm.
From fresh salad greens to hearty mustard greens, this is what community growing looks like. The Chinese mustard greens are especially beautiful because they remind us how much culture, flavor, and history can live in the food we grow. With their bold, peppery flavor, they can be cooked with garlic and chili, added to soups, or pickled and enjoyed in so many ways.
This is only the beginning.
Every seed planted is a lesson.
Every harvest is a reminder.
And every crop grown brings us one step closer to teaching sustainability, food access, and the power of reconnecting with the land.
As long as you have dirt, you should never be hungry.
