What’s cooking at the library?
Corn Fritters

3 cups corn kernels (thawed frozen corn, or cut fresh off the cob)
2 eggs
1 cup flour (all purpose or gluten free 1:1)
1 Tbsp. finely diced onion (optional)
1 small jalapeno, finely diced (optional)
Shredded cheese or cottage cheese (optional)
1 tsp. Italian seasoning or your choice of seasoning
Salt and pepper, to taste
¼ cup milk, if needed
Olive oil for cooking

Mash the corn kernels until most of the kernels are broken and juice comes out. Add the rest of the ingredients and mix well. Add a small amount of milk if it seems too dry.
Heat several Tbsp. olive oil in a pan. Using a small scoop, add the corn batter to the pan. Cook until golden brown. Flip over and cook the 2nd side until it is also golden brown and the fritter is cooked through. Serve hot.
