John’s Gazpacho (V, VT, P)

John’s gazpacho is legendary. He’s been creating it for at least fifty years and still continues to “tweak” it to enhance the flavors. But in 2012 he finally wrote down his “official recipe.” And here it is!

Ingredients:
½ green bell pepper, chopped
½ red bell pepper, chopped
3 medium-sized ripe tomatoes, chopped
1 small onion (red or white), chopped
1 medium cucumber, peeled and chopped
3 cloves fresh garlic, pressed
½ cup coarsely crumbled French bread
40 ounces tomato juice (Campbell’s or try an organic brand)
3 Tbsp. olive oil (a good EVOO or try an infused olive oil with lemon or orange)
1/8 cup red wine vinegar (or sherry vinegar)
2 tsp. Spanish paprika
1 Tbsp. sea salt
1 tsp. cumin
Fresh-ground black pepper (to taste)
Hot sauce (Crystal or Tabasco) to taste
Worcestershire sauce (to taste)

Garnishes (you can reserve some of the above ingredients for the garnishes)
Cucumber
Onion
Tomato
Green and/or red peppers
Croutons

Also add the following if you like:
Diced avocado
Minced chives
Crabmeat (optional)
Cooked shrimp (optional)

Method:
Pour the tomato juice into a blender. Add the peppers, onion, tomato, cucumber and bread, and puree. Add the garlic and the remaining ingredients and blend for at least a minute. Refrigerate for up to six hours.
Arrange the garnishes in small bowls and put them on the table. Remove the soup from the refrigerator and mix well. Pour into individual bowls and serve with the garnishes. The crab and/or shrimp are lovely additions if you are serving the gazpacho as an entrée.

Goes well with sourdough bread or warm corn tortillas.

Serves: 4-6
Prep time: 40 minutes
Cooking time: refrigeration time 6 hours
