Our local & seasonal food April tasting was a huge hit with high school students and third graders alike! Thank you for the delicious spinach Wendell Lee Wagner Maggitti for our green smoothies. We blended it along with some frozen fruit, yogurt, orange juice, and a little local raw honey for a healthy treat!

From taps to tastings! 🍁
For the past month, our own backyard has been the hub of a massive cross-curricular project. We’ve hosted students from high school science and digital media courses to our enthusiastic fourth graders and ENL club to share the magic of sap collection.

On a picture-perfect sunny Monday, we boiled down our haul and finished with almost two gallons of liquid gold! We’ve spent the last few days celebrating—first with a pancake feast in Mrs. T’s room, and today by serving up homemade syrup with sheet pan pancakes for the third-grade lunch tasting. Nothing beats the taste of hard work! 🥞✨

Schoolyard Sugaring 2026
Last week, our club ventured out into neighboring woods and tapped several maple trees to kick off maple syrup season! We are so grateful to be harvesting the first agricultural product of the year together while learning about the gifts and the responsibilities of being part of nature 🍁

A little late sharing this, but we hosted our February tasting last week with Fredonia Elementary Second Grade!
The harvest of the month in NY is root vegetables, so we whipped up some rosey beet humus. We are so proud of our students for trying this new and healthy food! 🫜

When it's this cold out, the best food for warming up is, of course, chili!

Today we served some to our 6th grade lunch. This chili was as local as they come! It featured ground venison donated by our own student hunter Mason Tomaszewski, tomatoes and bell peppers from Mrs. Joint's freezer, and NY grown kidney beans.

Thank you for hosting us Fredonia Middle School!

Carrots may not be the first food to come to your mind when you think about cold weather foods, but our friends at Maggitti Farms know this is the best time of year to have them!

Thank you Wendell Lee Wagner Maggitti for gifting some deliciously sweet carrots to us to prepare and serve to the second grade lunch today!

Check out some smiles from our event today as well as the YouTube video that talks about what makes December carrots so special and sweet 🙂 🥕

Month three of our local, seasonal tastings at Fredonia Elementary School!

This month we served up Roasted Butternut Squash to our third graders. Many students tried squash for the first time and found they liked it!

Thank you Yerico Farms for the generous donation of beautiful squash!

Our October local food tasting was of course, pumpkins! After fun carving and painting with our club members, the elementary and high school life skills classes roasted some delicious pumpkin seeds. Last Thursday, we were able to share the tasting opportunity with both 4th and 6th grade lunches. Thank you to Mrs. Gambino, Mrs. Tomaszewski, their assistants and kiddos!

We took advantage of the sunshine and half day of school and put in 3 hours of work in our garden space! Mr Haase led our students as they built us a storage shed for organizing tools, and other students worked on setting up a vermicomposting system, and we cleared all 7 raised beds of the rotten lumber and weeds! It was a great day!
