Ingredient Prep School Tip - most vegetables can be simply chopped a few days in advance and refrigerated in airtight containers, but some benefit from a little special handling to help preserve their flavor, texture, or color.

One that comes to mind is Apples. Apples oxidize (turn brown) after cutting because enzymes and compounds stored separately in each cell of the fruit become available to interact with each other and with the air. Although oxidation doesn't affect the taste, we store chopped apples in acidulated water in an airtight container in the fridge to prevent browning. Use about 3/4 tablespoons of lemon juice or vinegar per 1 cup of water. Drain and pat apples dry before using them in a recipe.

A local homeless family was playing music at Safeway today. We were able to give them a large bag of food from our food drive. It brought tears to the mom's eyes. She had her son playing the violin and the younger daughter stood behind them. I did not get to close because I can't post children on my website withhout promise. I told them I will post this but their faces will not be shown.
Her teenage son played the violin 🎻 beautifully. I know you don't see much but you can hear how beautiful he played. 
I am so grrateful that Safeway is helping us be able to help families like these. They now have a week's worth of food. My there family be blessedd. I hope if they need more food they come back and let us know. We will be there for a month every weekend.

Second day at the Bright Light Center for Hope Holiday Drive. We will be helping local foster children, at risk youth, and Local Homeless.

We want to thank Safeway on 1850 Prairie City Rd, Folsom, CA 95630, for partnering with the Bright Light Center For Hope we so far have received three baskets of food for the Holiday Drive to help Foster children, At-Risk youth, and local homeless.

🍌🥐🥯🍩Bright Light Center for Hope distributed Blessing Boxes to businesses which offer professional opportunities to single parents, group homes serving at-risk youth as well as numerous homeless families this week. Special thanks to Safeway, Bel-Air, Sprouts and Trader Joes for helping to make this effort a GIANT success!
