Today’s recipe featuring collard greens is the last one to highlight the hard work of Asbury Farms in helping to feed Flint, but it’s certainly not the least! I’ve been wanting to try good, southern style collard greens, but I never seemed to make time to try and cook them properly. With this recipe, I’m sure I’ll have the motivation to make them and hopefully you will too!

Ingredients:
3 lbs Collard greens (BE SURE TO RINSE THEM UNTIL ALL THE DIRT IS GONE. No one likes gritty greens).
2 smoked ham hocks or smoked turkey legs
3 32oz containers of chicken broth
2 tablespoons of granulated sugar (you can substitute brown sugar instead)
1/3 cup of apple cider vinegar
1 1/2 teaspoons of salt, or to taste
3/4 teaspoons of ground black pepper, or to taste
2 finely diced sweet onions
4 cloves of garlic, finely chopped
If you want to add some heat, add crushed red pepper flakes, cayenne pepper, or a few dashes of hot sauce.
PREPARING THE COLLARD GREENS:
Step 1:
Fill your cleaned sink with lukewarm water and place the collard greens in the water. Let the greens soak for a couple minutes to loosen any dirt on them. Then swirl the greens around, gently scrubbing them to remove any dirt on them.
Step 2:
Remove the greens from the water then drain the dirty water and rinse off your sink.
Step 3:
Repeat steps 1 and 2 until you don’t see any grit left in the water.
Step 4:
Separate the greens from the stems

Take a handful of greens, roll them up, and cut the rolls horizontally into small pieces. The smaller you cut them, the faster they will break down and cook.
PREPARING THE DISH:
Step 1:
Gather all ingredients.
Step 2:
Combine onions, ham hocks or turkey legs, and garlic in a stockpot; add chicken broth and simmer over medium heat until meat is falling off the bone, 1 to 2 hours. (Note: If using turkey necks, reduce the cook time to 45 minutes)
Step 3:
Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 hours.
Serve and enjoy!
