The best wines for hibachi are generally light-to-medium-bodied, high-acid, and aromatic whites or light reds, such as Riesling, Pinot Noir, or Sauvignon Blanc, which complement the grilled flavors, ginger, and soy sauces. Off-dry whites (e.g., Kabinett Riesling) balance soy-sweetness, while light Pinot Noir pairs well with beef.
Key Pairings by Protein & Style:
Seafood (Shrimp/Scallops): Chilled Chardonnay (unoaked), Sauvignon Blanc, Albariño, or Pinot Grigio.
