New York Grilled Apple Salad with Herb Apple Cider Vinaigrette

This is a very colorful, festive salad, thanks to use of both red and green New York State apples, and a healthy amount of romaine lettuce hearts. The herb apple cider vinaigrette nicely blends herbs, spices, and olive oil, with just a touch of apple cider vinegar.

Ingredients:

Salad:

4 Romaine hearts, washed, trimmed, top inch chopped off, root end left intact
1 medium red apple, cored and cut into 6-8 wedges
1 green medium apple, cored and cut into 6-8 wedges
8 walnuts, halved
1/2 medium red onion, sliced into disks
2 slices pumpernickel bread, cut into cubes
2 ounce(s) shaved parmesan cheese
2 large hardboiled eggs, sliced

Topping:

1 tablespoon(s) apple cider
6 tablespoon(s) olive oil
2 tablespoon(s) apple cider vinegar
1/4 teaspoon(s) sea salt
1 teaspoon(s) each chopped fresh oregano and thyme, OR 1 teaspoon of dried herb mix
Ground black pepper to taste
Combine all ingredients in a cruet or lidded jar; shake vigorously to combine.

Instructions:

Combine all vinaigrette ingredients in a cruet or lidded jar; shake vigorously to combine.
Prepare grill by lining it with foil or using a grill pan to keep smaller pieces of food from falling through the grill grate. Preheat grill on high temperature.
Use a basting brush to paint romaine hearts, apple wedges, red onion, and walnut halves with vinaigrette. Saturate bread cubes in remaining vinaigrette. Place romaine and apple wedges on grill. Add onion, bread cubes and walnuts to grill. Grill on high until all ingredients are lightly browned, turning as needed to brown uniformly – approximately 5-10 minutes for the romaine, 20 minutes for apples and other ingredients.
Remove grilled items from heat and arrange on four plates, placing grilled romaine on each plate first and then topping romaine evenly with other grilled ingredients. Top with shaved parmesan and boiled egg slices. Serve promptly.

Some growers hand-water trees one by one, while others use advanced irrigation systems running through the rows. Every orchard has its own setup, its own challenges, and its own way of caring for the crop.

But at the end of the day, the goal stays the same: making sure every tree gets the water it needs to grow healthy, strong, and ready to bring you fresh New York apples.

Tis the season where apple growers are out checking fruit clusters, watching tree growth, and making careful decisions for the season ahead 🍎

One of those steps can include chemical thinning. It is a safe and highly regulated practice that helps trees focus their energy so apples can grow to the best size, quality, and color possible. It’s all part of the process of bringing healthy, delicious New York apples from the orchard to your table.

Upside-down Apple Coffee Cake
Apples and cranberries adorn the top of this moist cake that can be enjoyed as dessert or for a breakfast treat.

Ingredients:
1 cup(s) Natural Applesauce
1 medium apple
1/4 cup brown sugar
1 tablespoon(s) water
1/2 cup fresh or frozen cranberries
1/4 cup butter or margarine, softened
1 cup granulated sugar
1 egg
1 3/4 cup flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) ground cinnamon

Instructions:
Preheat oven to 350° F.
Cut apple in half and remove core. Cut each half into slices approximately 1/8-inch thick.
Stir together brown sugar and water in medium saucepan. Add apple slices.
Cook, stirring gently over medium heat, until apple slices are softened, about 5 minutes.
Sprinkle cranberries in bottom of nonstick or greased 9-inch cake pan. Arrange apple slices over cranberries, drizzling with brown sugar sauce. Set aside. In large bowl or mixer, beat butter with granulated sugar until thoroughly combined.
Add apple sauce and egg.
In separate bowl, mix together flour, baking soda and cinnamon. Gently blend into apple sauce mixture.
Spoon batter over apples and cranberries, spreading evenly. Bake for 30 minutes, or until toothpick inserted into center comes out clean.
Remove from oven and cool 15 minutes before turning cake out onto wire rack to cool completely.

Right after apple blossom season comes one of the most important stages in the orchard...petal fall!!

As blossoms begin to drop, tiny fruitlets start to form, giving growers an early look at this year’s apple crop.

This stage is important because it helps apple growers monitor tree health, protect developing fruit, and continue caring for the orchard through changing spring weather.
Every falling petal means the season is moving one step closer to harvest
