Alfredo Chicken with Creamy Garlic Parmesan Spaghetti

Ingredients:

1½ lbs boneless skinless chicken breasts, cut into thick bite-sized chunks
1 tsp salt
½ tsp cracked black pepper
1 tsp garlic powder
½ tsp dried Italian seasoning
2 tbsp olive oil
4 tbsp butter
5 cloves garlic, minced
½ cup heavy cream
½ cup freshly grated Parmesan
1 tbsp chopped parsley

For the Creamy Parmesan Spaghetti
14 oz spaghetti
3 tbsp butter
4 cloves garlic, minced
1¾ cups heavy cream
4 oz cream cheese, softened
1½ cups freshly grated Parmesan
¾ cup shredded mozzarella
½ tsp white pepper
¾ tsp salt

Directions:

1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve ½ cup pasta water, then drain.
2. Pat chicken completely dry. Season evenly with salt, cracked black pepper, garlic powder, and Italian seasoning.
3. Heat olive oil in a large heavy skillet over medium-high heat. Add chicken in a single layer and cook undisturbed for 4 minutes until a deep golden crust forms.
4. Flip and cook another 3–4 minutes until fully cooked with crisp edges.
5. Reduce heat slightly. Add butter and minced garlic. Spoon melted garlic butter over the chicken for 1–2 minutes until glossy.
6. Pour in ½ cup heavy cream and let it simmer briefly. Stir in ½ cup Parmesan so it melts onto the chicken, creating a light Alfredo coating. Sprinkle with parsley and remove from heat. The chicken should look deeply golden and creamy on the surface.
7. In a separate large deep skillet, melt butter over medium heat. Add garlic and cook until fragrant.
8. Pour in heavy cream and bring to a gentle simmer.
9. Add cream cheese and whisk until completely smooth.
10. Stir in Parmesan and mozzarella gradually until fully melted and thick. The sauce should be heavy, smooth, and glossy.
11. Season with white pepper and salt.
12. Add cooked spaghetti and toss thoroughly so every strand is completely coated. The sauce should cling thickly and stretch slightly between strands.
13. Plate generously: a large mound of creamy garlic Parmesan spaghetti on one side and a heavy serving of Alfredo-coated chicken on the other.

When I was a little girl, they taught me that the smartest kids were the first to be done with the timed math quizzes.

When I was a teenager, they taught me that I needed to finally figure out what to do with the rest of my life.

When I was in college, they taught me that if you wanted to be successful, you had to study longer, work harder, climb faster than everybody else.

When I had my first job, they taught me that overworking myself was a badge of honor.

When I got married, they taught me that I needed to hurry up and have kids before it was "too late."

When I had kids, they taught that I needed to get them to grow up, move up, and hurry up out the door.

But then I finally turned around and realized that I only have this one life.

And once I realized I am not going to be on this earth forever, I decided to stop treating my life like an emergency. To walk, instead of run. To sing really loud to songs with good harmony. To always make people -- not projects -- my priority. To stop treating myself as an afterthought. To eat amazing food, pull over to the side of the road for a beautiful sunset, laugh when I want to, cry when I need to, and be an actual human person.

I used to to think that it takes strength and courage to rush through life. But real courage comes in slowing down. So this is my promise to myself: I will stop rushing things that need time to grow -- including me.
