Congratulations to this year’s graduates of our 23rd Culinary Arts Summer Program at James Campbell High School!

We are incredibly proud of each student for their hard work, dedication, and accomplishments throughout this year’s program. Watching their confidence and culinary skills grow has been truly rewarding.

It was a tremendous privilege and honor to celebrate this special occasion with so many distinguished guests who continue to support our youth and our community. Mahalo to United States Attorney Ken Sorenson, Honolulu Police Department Chief of Police David Lazar, Acting Assistant Chief Gail Beckley, former United States Attorney Florence Nakakuni, Councilmember Tyler Dos Santos-Tam, Senator Kurt Fevella, and the many other community leaders, partners, and supporters who joined us.

Your presence and words of encouragement made this celebration even more meaningful. Together, we continue to demonstrate what can be accomplished when law enforcement, government, schools, businesses, and community organizations work hand in hand to invest in our youth.

Congratulations once again to all of our students. We wish you continued success as you pursue your dreams and build bright futures!

Today our culinary students took their skills to the next level by transforming an affordable cut of beef into an elevated dish: perfectly seared chuckeye steak with fresh chimichurri and a bacon green bean casserole.

Under the guidance of Executive Chef Randy, students learned how to cook a steak to a perfect medium-rare, practice precise knife skills to create a balanced and flavorful chimichurri, prepare a rich cheese sauce from scratch, and discover how technique and creativity can elevate even a budget-friendly cut of meat.

Each class continues to build confidence, sharpen culinary fundamentals, and show our students that great cooking is about skill—not just expensive ingredients. Mahalo to everyone who makes this program possible and for investing in the next generation of culinary talent! 👨‍🍳🥩💚

Today’s culinary session was all about leveling up.

Executive Chef Randy guided students through the art of Roy’s signature misoyaki sauce—traditionally paired with their iconic misoyaki butterfish—but today the focus was on transformation and technique. Students learned how to take that same signature sauce and elevate a beautifully seared salmon, showing how one foundational flavor can be adapted into something new with precision and creativity.

The dish was completed with Okinawan sweet potato mash and green beans finished in a shiitake corn butter sauce, bringing balance, depth, and comfort to a truly elevated plate.

More than just a recipe, today was about understanding how technique, tradition, and innovation come together in the kitchen—proof that when you learn the foundation, you can always level up.

Today’s Culinary Arts class was filled with creativity and hands-on learning! 👨‍🍳🍛

Under the guidance of Executive Chef Randy, students prepared chicken katsu curry with Portuguese sausage fried rice and a poached egg while learning how leftover ingredients can be transformed into new and exciting dishes.

Special guest Acting Major Carreira joined Executive Chef Randy in offering valuable plating critiques and encouragement to the students. Lt. Caraulia and Acting Lt. Shin were also in attendance, showing their support as students continued to build their culinary skills and confidence.

🌮 Day 4 of Culinary Class was a delicious success!

This week, participants learned how to make flavorful tacos with guidance from Executive Chef Randy, who shared a variety of techniques and kitchen tips to help elevate a simple taco into something special. From proper preparation to creating tacos with crispy, cheese-melted exteriors, everyone had the opportunity to learn new skills while having fun in the kitchen.

What’s on the menu for Day 3 of the Culinary Arts Program? 🍽️

Today’s meal featured hamburger steak, fried noodles, and kimchi cucumber—comfort flavors the kids really enjoyed!

Executive Chef Randy spent the day with our students, teaching knife skills like julienning vegetables and sharing his personal journey into becoming an executive chef. He also talked about setting goals and finding your passion through hard work and dedication.
