Tip of the week: Follow the “Laws of Salsa”

Use an approved recipe if you are going to can your salsa. Add the exact amount of acid (vinegar or lemon juice), tomatoes, and vegetables that the recipe calls for. You can swap out dry spices as you like. Store salsa in the refrigerator once opened. If you want to use one of your favorite recipes not from an approved source, you can still freeze it to preserve it.
