The recipe that we are using is this:
Hearty Winter Vegetable Soup
Ingredients – 10 servings
2 tablespoon olive oil
1 medium chopped onion
1 medium chopped carrot
2 cloves garlic, minced
6 cups reduced-sodium vegetable or chicken broth
2-14.5 oz cans low-sodium diced tomatoes
¾ cup water
1 cup dry orzo pasta, or other small pasta
2 teaspoon dried Italian seasoning
1 10z package frozen spinach or 4 cups fresh spinach
2 15 ounce can reduced-sodium navy beans or white kidney beans, rinsed and drained
1 medium diced zucchini
Salt/pepper to taste
*optional: your choice of added meat, such as shredded chicken, cooked ground meat such as ground turkey or chicken. If using beef/pork, use lean proteins.
Directions:
In a large pot, heat olive oil over medium-high heat. Cook and stir the onion, carrot, and garlic in hot oil about 3 minutes or until onion is tender. Stir in the broth, undrained tomatoes, water, uncooked pasta, and Italian seasoning.
Bring to boiling; reduce heat. Simmer, covered, about 10-15 minutes or until pasta is tender.
Stir in the spinach, beans, zucchini, and salt/pepper to taste. *Add optional cooked meat (shredded chicken, cooked ground meat). Cook uncovered for 5 minutes more.
