Turn Your Thrive Harvest Box Into School Lunch Magic!
Back-to-school season is here, and your Thrive Harvest Wellness Box is packed with fresh ingredients that can make lunchbox prep easier (and more nutritious!). Here are a few kid-friendly ways to use your weekly veggies:
Make-ahead egg bites - A great grab-and-go breakfast or lunchbox addition. Whisk together 6 eggs, 1/4 cup milk, a handful of finely chopped CSA veggies, 1/2 cup shredded cheese, and a pinch of salt and pepper. Pour into greased mini muffin cups and bake at 350°F for about 15–18 minutes, until set. Cool and refrigerate for easy weekday lunches!
Quesadilla filling - Have leftover cooked or chopped veggies? Toss them between tortillas with cheese for a quick, crispy lunchbox-friendly quesadilla.
Mini naan pizzas - Turn leftover veggies into pizza toppings! Add chopped veggies and cheese to mini naan breads, bake until warm and bubbly, and you've got an easy kid-approved lunch.
Sneak in the veggies - Finely chop or shred zucchini, carrots, peppers, spinach, mushrooms, or other favorites and mix them into eggs, pasta sauce, mac & cheese, meatballs, muffins, or quesadillas. Small pieces make veggies less intimidating for picky eaters.
Keep it snack-sized - Slice cucumbers, carrots, peppers, or other crunchy veggies and pair them with hummus, ranch, cheese, or a favorite dip.
The best part? One CSA box can become several easy lunchbox ingredients throughout the week. Prep a few veggies when your box arrives, and future-you will thank you!
