It may be a little stinky, but every shell collected helps restore our local waters and grow future oyster reefs.

This, week we’re celebrating Grace. She used her scholarship to pursue a degree in Marine Biology. She is currently working in a lab researching the effects of sea urchins on the bio erosion of coral reefs. She just got scuba certified and is hoping to continue contributing to coral restoration and research when graduated.

Some reproductive science this Valentines Day! About seven weeks after hatching, eastern oysters become mature. Cued by warm hatchery waters, adults release eggs and s***m into the water in a process called broadcast spawning. Females can release over 100 million eggs, but only about one percent survive. Within hours of fertilization, the eggs form shells, begin moving, and soon develop into free-swimming larvae looking for a place to settle.

In this weekly series, we will be highlighting a chef or owner from one of our partner restaurants. These individuals are an integral part of our team, training their staff on shell-saving protocols that divert shells from landfill and repurpose them for oyster reef restoration.

This week, we’re celebrating Executive Chef de Cuisine Mbaba “Baba” Danso of Gurney’s restaurant, Gigi’s. With sweeping ocean views as the backdrop, Baba’s menu spotlights locally sourced ingredients—delivering a refined coastal dining experience that’s as thoughtful as it is delicious.

We’re growing! We’re excited to share this map highlighting our 25 (and counting!) restaurant partners. A huge thanks to the chefs and restaurant owners who go the extra mile to protect our waters, and to our shell shuttle volunteers and for making it all possible. As our network continues to expand, we’re excited to keep filling in the map. Is your restaurant in the Hamptons? We’re currently collecting from Southampton Village to Montauk and would love to have you join our efforts!

We also collect shell from individual households and have four public shell drop offs where you can deposit oyster and clam shells. Thank you to , , , and the for generously providing this collecting space.

This, week we’re celebrating our (2024 recipient) she is pursuing a degree in Marine, Estuarine & Freshwater Biology with a double minor in Marine Policy and Animal Behavior. She is particularly passionate about the bioacoustics of marine mammals and the communication strategies used by marine organisms.
