To freeze cabbage for later use in cooked dishes, core and shred or wedge the cabbage. Blanch it in boiling water for 1.5 to 3 minutes, immediately plunge it into ice water, and drain. Flash-freeze on a baking sheet before transferring to airtight freezer bags.
This quick and simple coleslaw is made with freshly shredded cabbage and carrots and is tossed in a creamy homemade dressing.
