If you've ever planted lemon balm, you already know the problem. It grows like it has somewhere to be. One little plant turns into a sprawling patch by midsummer, and most people end up with way more than they know what to do with. So it gets made into tea a couple of times, then half of it goes to waste.
Which is a shame, because tea barely scratches the surface. That same lemony harvest taking over your herb bed can go into cold drinks, frozen summer desserts, savory dinners, and a few things that never touch the kitchen at all. There's one you rub on your skin before going outside in the evening, and another that ends up in your bathroom, not your fridge.
The flavor is this gentle citrus note, nothing sharp, so it slips into far more than you'd expect. And since cutting it back only makes it grow faster, you can keep harvesting all season without ever running low.
