Friends of Shiloh Garden-Shiloh Field Friends of Shiloh Garden Shiloh Field is a community garden providing fresh produce to those in need. We are the largest community garden in the United States.

Friends of Shiloh Garden mission statement: Friends of Shiloh Garden promotes and supports food production for low and moderate-income families, and educates the public on various garden techniques. We currently provide fresh grown produce to 13 different agencies in Denton County. These agencies include Fred Moore Day Care, Monsignor King Shelter, Our Daily Bread, Freedom Food Pantry, MLK Recrea

Canned Potatoes
Wash, trim, peal (optional) potatoes.
Cut into chunks.
Boil for 10 minutes.
Pack into sterilized canning jars. Add 1/2 teaspoon of salt to each can.
Fill with boiling water. Seal with sterilized jar lids.
Process in water bath for 2 1/2 hours.

Wash, scrape, & rinse. Slice, dice, or leave whole.
Boil 3 minutes. Pack into HOT sterilized canning jars. Add 1/2 teaspoon salt to each jar. Cover with fresh boiling water. Seal.
Process for 2 1/2 hours in water bath.

"Perfect" Pickled Onions
4-5 medium onions
3 cloves garlic, pealed/sliced
3 jalapeno/other pepper, seeds & membranes removed
6 bay leaves
1/2 teaspoon red pepper flakes
3 cups apple cider vinegar
1 1/2 cups water
1/3 cup sugar
4 teaspoons salt
1 teaspoon whole black peppercorns
Sterilize at least 3 jars and canning lids & keep hot.
Combine vinegar, water, pepper flakes, sugar, salt & peppercorns in medium sauce pan over medium heat. Bring to a simmer. Cook, stirring often until sugar/salt is dissolved. Remove from heat.
Slice onions into thin rings.
Into each jar place onions, 1 clove garlic, 1 jalapeno, & 2 bay leaves. Ladle hot liquid into jars covering onions. Seal immediately. Store for at least 24 hours before serving.

Copper Pennies (from "Cowtown Stitchers" cookbook Fort Worth, Texas 1986 (The Embroiderers' Guild of America, Inc.) from Frances Hargis.
4-6 cups carrots; sliced
1 teaspoon prepared mustard
1 green bell pepper, chopped
1/2 cup tomato soup (I used tomato juice)
2 Tablespoons Worcestershire sauce
1 teaspoon pepper
1 teaspoon salt
1/2 cup sugar
1/4 cup salad oil
1 small onion, chopped
1/4 cup vinegar
dash of tobasco
Cook all in large metal pot for 10 minutes.
Ladle into sterilized canning jars. Seal. Water bath for 3 hours.

1/2 cup sugar
1/4 cup salad oil
1 small onion, chopped
1/4 cup vinegar

Thanks to the volunteers for harvesting through the thorns.
And a special thanks to the volunteer with the machette for chopping down the overgrown weeds!
