Did you know that the bulb is not the only part of the garlic plant that you can eat?
Scapes are the flowering stems that grow from the top of the garlic bulbs. Harvesting garlic scapes is an essential part of the plant's growth cycle because removing the scapes allows the plant to redirect more energy to growing a larger bulb underground.
Compared to the bulb, garlic scapes offer a milder flavor. Around this time of year, you may spot garlic scapes at local farmers markets. Don't be afraid to try them out in your own kitchen! Remove the flower and part of the lower stem that is firm and woody before using.
Garlic scapes can be grilled, sautéed, pickled, dehydrated, or eaten raw. Chop them up like chives for a garnish, make them into pesto, use them to add garlic flavor to salt and butter, substitute them for green beans in stir fry -- the possibilities are endless!
