Don't forget about the upcoming jam class at the King Recreation Community Building next Tuesday at 6pm! Link to sign up is below.

Register here to participate in the canning class the 6pm on Tuesday, August 6th. The class is $10 per person and will be held in the Community Building at Recreation Acres (107 White Road).

I guess it's time to tell you guys what's going on with the jar on the left.

With both jars I hot packed, which means I covered the carrots with boiling water once boiling I reduced heat to let the water simmer for 5 minutes. After this step I filled the jars with carrots, covering them with the water and left 1 inch of headspace.

Now here is where I missed a pretty big step. Before I ever put the jars in the pressure canner they sealed. The hot water caused a change in pressure which sealed the jars. The jar on the right was processed, while the jar on the left was not.

This picture is a really great visual for why processing is so important. After talking with the experts, it looks like we have some spoilage and pathogenic or harmful, microorganisms growing in the one on the left, which is what is making the water cloudy.
