NMCG is offering another one of our exclusive, hands-on intensive cheesemaking workshops where you will learn to turn gently pasteurized goat milk into delicate, Geotrichum mold-ripened goat cheese pyramids.
This is not a demonstration. This is a hands on learning experience in a state of the art demo kitchen.
In New Mexico, goat dairies are thriving because goats are hardy, easy to keep, and perfectly suited to our high-desert landscape. While goat cheese is delicious and easy to digest, some of these specific mold-ripened varieties are so fragile they are nearly impossible to transport. If we don’t learn to make them here, we simply won’t have access to them.
Over two days, you will:
• Master the art of Geotrichum inoculation and hand-ladling.
• Leave with your own finished cheese (~$25 retail value).
• Take home your own pyramid mold, cultures, and rennet to keep making at home.
• Gain access to our online community to share your future cheese successes (and failures!).
We’ll be learning in the state-of-the-art Barelas Community Kitchen, located in the most historic village in the ABQ metro area. It’s an area rich in Hispanic and Indigenous culture, just steps from the famed Barelas Coffee House and the Railyards Market.

Note: This is a two-day commitment—the cheese needs time to set so you can safely transport it home.
