In 2013, Concrete School District partnered with United General District 304’s Community Health Outreach department to launch a Farm to School program as a strategy to improve nutrition and access to healthy foods in Eastern Skagit County. Concrete Farm to School seeks to address challenges facing the small, rural town of Concrete by educating children and the community about healthy eating, local food, and gardening.

Berry Shortcake was a recipe that students could practice plating food. Here are some of their works of art- each plate was unique to the individual. We are so proud of these chefs-in-training and impressed with the focus they brought to this meal and activity. Can’t wait to cook with them next year, but now we focus on getting the garden ready for spring garden lessons.

Our last cooking class for 3rd-5th grade classes was Jerry shortcake. Flip through our photos to see students prepping the shortcake dough, whipping cream, and slicing strawberries. While the biscuits were in the oven, students had a mini lesson on how to use the 7 elements of art to design their plate of food. Learners drew their initial ideas on paper before using their ingredients, including chocolate drizzle, to make some unique and edible works of art. Next post will be students showing off their work!

In February, we wrapped up our cooking class series. Here are some moments of our classes working together to make two of the recipes: Kale Caesar Salad with roasted chickpeas and Three Sisters stew with a popcorn garnish. Students were excited to cook with kale, popcorn and scarlet runner beans that they grew and harvested out of the school garden. Many students took adventure bites and were surprised that they liked the food. Although ~25 students cooking at once makes for a loud and bustling classroom space, behind the noise is responsible and joyful students and hands-on learning!
