Broccoli and amaranth hamburger recipe

Comprar los ingredientes locales de pequeñxs productorxs aseguran un sabor fresco y vibrante para sus platos. ¿Quién quiere hacer esta deliciosa hamburgesa de brocoli con ?

(4 porciones)

∙ 30g semilla de amaranto
∙ 1 pza chica de brócoli
∙ 50g de cacahuate horneado
∙ 4 bolillos (un pan artesanal de amaranto será rico!)
∙ para acompañar (tomate, aguacate, chiles (al gusto))

Cocer la semilla de amaranto: Lavarla y colarla, las veces que sean necesarias procurando dejarla más limpia posible (sin piedras o tierra). • Poner a hervir el agua, ya hirviendo el agua dejar caer la semilla entre 10 a 15 minutos. • Retírala del fuego. • Importante escurrir la semilla una vez retirada del fuego.

Cocer al v***r el brócoli 20 min., Pasando los minutos dejar enfriar y desasear. • Posteriormente triturar en la licuadora el cacahuate seco. • Colocar en un recipiente el brócoli y desecho junto con la semilla de amaranto y el cacahuate triturado, realizar una mezcla. Comenzar a realizar tortitas y pasarlas por el sartén con 1 cucharada de aceite.

(4 servings)

∙ 30g amaranth seed
∙ 1 pc broccoli girl
∙ 50g of baked peanut
∙ 4 rolls (artisanal amaranth bread is delicious)
∙ to accompany (tomato, avocado, chilies (to taste))

Cook the amaranth seed: Wash and strain it, as many times as necessary until all the detritus is removed. • Bring the water to a boil, add the seed, boiling for 10 to 15 minutes. • Remove from heat and drain.

Steam the broccoli for 20 minutes. • Drain and allow to cool. • Crush the dry peanut in a blender. • Mix the broccoli, cooked amaranth seed and crushed peanuts. • Start making patties and heat in a flat-bottomed pan with 1 teaspoon of oil.

Serve with your favorite sandwich condiments!

We would like to share with you a fundraising effort by one of the most interesting amaranth promotion programs that is also a member of our amaranth network. Please support Puente a la Salud Comunitaria with their giving challenge! They are not only an important force promoting the production and consumption of amaranth but hey are also one of the most amazing examples of community work there is. They make a deep impact with all the households that participate in their program. Donate for healthy people, for conservation of agrobiodiversity and for the beautiful orange/magenta/green plant of amaranth that has been bringing joy and nutrition to people since pre-Columbian civilizations.
