This past Friday the Southeast Food Coalition had the honor of hosting another free family-friendly cooking class at Deerfield Hills Community Center & Sprayground for our community and this time we made sushi together. 🍣

One of our favorite parts of this work is creating spaces where families can come together, learn something new, share a meal, laugh, and build confidence in the kitchen together. Food is more than just nourishment, it’s connection, culture, education, and community.

Through these classes we hope to continue encouraging healthy relationships with food, teaching simple nutrition, and showing that cooking at home can be fun, affordable, and something the whole family can enjoy together.

Thank you to everyone who came out, rolled sushi with us, asked questions, learned, and spent the evening building community around the table. These moments matter. ❤️

This past weekend, our coalition hosted our first Volunteer Farm Day this season at Good Steward Farms

Volunteers helped plant 1600 onions, mend garden beds, and ended the day sharing a meal together on the farm.

We started these days because we believe in supporting our local farmers and building real relationships. It’s also about helping our community connect to where their food comes from and maybe even feel inspired to grow their own.

This is just the beginning.

Thousands of Coloradans are about to lose access to food assistance and many don’t even realize it yet.

COMMUNITY UPDATE: SNAP CHANGES IN COLORADO

Starting May 1, 2026, a recent federal policy change under H.R. 1 will impact thousands of Coloradans. It’s estimated that around 9,000 people across our state will lose access to SNAP (food assistance).

We want to share clear, helpful information so our community understands what’s changing and who may be affected.

What’s changing
A federal law (H.R. 1) has introduced new eligibility restrictions for SNAP. As a result, some individuals and families will no longer receive benefits that help them purchase groceries.

This is a complex policy change. If you are unsure about your eligibility, we encourage you to connect with your county caseworker for guidance on your specific situation.

**Who may be impacted**
Some individuals who previously qualified for SNAP may no longer be eligible, including:

* Certain refugees and asylees
* Afghan and Ukrainian humanitarian parolees
* Survivors of trafficking
* Individuals with withholding of removal status
* Some American Indians born in Canada
* Individuals with humanitarian protections (such as battered spouse/child/parent status)
* Individuals paroled into the U.S. for extended periods

*Some members of mixed-status households, including children, may still qualify.*

**Who remains eligible**
The following groups are still eligible for SNAP:

* Cuban and Haitian entrants
* Compact of Free Association (COFA) citizens
* Lawful permanent residents (green card holders) who meet specific requirements

**What this means for our community**
These changes will have real impacts across Colorado:

* More households may struggle to afford groceries
* Families may face difficult financial decisions
* There may be increased confusion around accessing support
* Community food resources will likely see increased need
* Local food systems may feel broader economic effects

Join us this Saturday at our first Volunteer farm day at Fields of Care: Powered by Good Steward Farms as we help our local farmers and see where our food comes from. By helping our local farmers we are also building a connection and strengthening our local agriculture. We also hope this helps inspire and motivate our community to grow their own food also.
