Cinnamon Mickey Mouse pancakes. Some say Moose or puppy.
Dry ingredients (1 cup baking mix, 1 1/2 cup wheat flour, 1/2 tsp. ground cinnamon, 1/8 tsp ground ginger, 3 tbsp baking powder (can use cocoa baking powder) , 1 small pinch baking soda (1/10th tsp), 1 tbsp sweetner (stivia, artificial or agava mix w/wet ingredient), 1/2 tsp. salt. Whisk dry ingredients (crumbled consistency),
mix wet ingredients (another bowl), slightly beat 1 LG egg, mix 1 cup 2% milk (gradually add mixture to middle of dry ingredients- consistency little thinner than pancake batter). Let batter stand 10-15 minutes, batter will become puffy. Re-stir, add additional milk if too thick. You want consistency too be loose.
Cooking: heat non-stick pan or griddle (no oil needed). Spoon three portions of 2 tbsp batter mixture and cook low heat until holes are visible/very little liquid on top (2-3 minutes), flip Browning 30 seconds.
**Note** Shape & form pancake while cooking 1st side (option-spread butter on top when plated) Now the fun part: Use fruit preservative, sugar-free jelly for eyes, nose, mouth & outer ear and use 1 scoop of frozen cool whip for hat. Drizzle low darn syrup across top.
