So I decided to try a purple sweet potato because they're supposed to be the highest in nutrients and antioxidants. I just peeled it to put it in the frying pan. Sauté it, and I thought it would be purple on the inside, but it's white. Is that normal? Have you ever had a purple sweet potato? I love sweet potatoes, but this one's new to me. Really not sure about it. Any feedback would be appreciated.
