Saying no to the snack a friend offers. 🍪

Watching everyone line up for pizza day. 🍕

Skipping the cupcake at the class birthday party. 🧁

Not being able to eat the team snack after the game. ⚾️

Celebrating with friends at a restaurant that isn’t safe for them. 🎉

These little moments happen every day - and they add up. 😔

We share this to help spread awareness about what life with celiac disease can really look like for kids. And it’s why we’re so passionate about bringing joy, inclusion, and safe snacks to children with celiac disease across the country. 💛

We did it… 1,000+ snack packs gifted 💛😭

Nick’s Snack Pack was created to make sure kids with celiac disease have safe, gluten-free snacks they can actually enjoy - and thanks to YOU, we’ve been able to send over 1,000 boxes to families across the country.

That’s 1,000 moments of relief for parents.

1,000 kids who get to feel included.

1,000 reminders that this community shows up in the most incredible ways.

We couldn’t do this without our amazing company partners, the gluten-free community who shares and supports us, and the celiac parents and kiddos who inspire us every single day.

This milestone means everything… and we’re just getting started 💛

If your kids loved Little Bites, you NEED to try this gluten-free homemade version 🙌✨

I used a copycat mini muffin recipe from and simply swapped in a 1:1 gluten-free flour - and they turned out so soft, fluffy, and kid-approved 🧁💛

Here’s what you need:
1 cup 1:1 gluten-free flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup whole milk plain greek yogurt
1/3 cup maple syrup (or sugar)
1/4 cup unsalted butter (melted and slightly cooled)
2 eggs (lightly beaten)
2 tsp pure vanilla extract
3/4 cup mini chocolate chips

1. Preheat oven to 375 degrees. Spray a 24-cup mini muffin pan with non stick spray.

2. In a medium bowl, stir together flour, baking powder, baking soda and salt.

3. In another bowl, stir together the yogurt, maple syrup, eggs, butter and vanilla.

4. Gently stir the yogurt mixture into the flour mixture.

5. Stir in chocolate chips.

6. Divide batter among the muffin tin, filling about to the edge.

7. Bake for 10-12 minutes or until edges are lightly golden brown.

8. Remove from oven and let cool in pan for 2 minutes. Run a knife around the edges to loosen and then carefully transfer to wire rack to cool fully.

✨If you grew up loving Cosmic Brownies… you NEED to try this gluten-free version! ✨

Super fudgy chocolate brownies topped with a silky ganache and those nostalgic rainbow chips. Honestly… they might be even better than the ones we grew up with. 👏🏻

Huge shoutout to for the amazing recipe!

Brownies:
1 1/3 cups semi-sweet chocolate chips
5 tablespoons butter
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1/3 cup gluten free 1:1 flour
3 tablespoons unsweetened cocoa powder
1/2 tsp kosher salt

Ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy whipping cream
GF rainbow chocolate coated chips (found mine on Amazon!)

How to Make:

Preheat oven to 350°F and line a metal 8x8 pan with parchment paper.

In a microwave safe bowl, combine 1 1/3 cups chocolate chips with the butter and melt in the microwave in 15-20 second intervals until smooth. Let it cool slightly while you work on the eggs and sugar.

In a large bowl, combine sugar and eggs. Whip with whisk or handheld electric mixer for 2-3 minutes until doubled in volume, lighter in color and sugar is almost completely dissolved (she stresses not to rush this step!)

Add chocolate mixture to egg mixture along with vanilla and mix until smooth and well blended.

Add in cocoa powder, gluten-free flour, and salt and stir until just combined.

Pour batter into pan and bake 18-20 minutes until set (mine took more like 23 minutes but depends on the oven!) Let brownies cool completely before frosting.

Heat heavy cream until nearly boiling (on stove or in microwave), then pour over chocolate chips. Let sit about 5 minutes and then stir until smooth.

Spread ganache over cooled brownies and sprinkle with rainbow chips.

Chill until set, then slice and enjoy! 🍫

The Gluten-Free for Good event this past Saturday at Armored Cow Brewing was nothing short of amazing. I’ve always dreamt of having a local volunteer opportunity here in Charlotte, and seeing it come to life felt surreal. Truly a dream come true. ❤️

Because of this incredible community, we packed 120 snack packs that will be mailed across the country to kids diagnosed with celiac disease. Watching everyone jump in to serve with so much joy meant more than I can put into words. We appreciate everyone who came out to help, and we LOVED meeting you all. 🫶

Thank you to the amazing vendors who shared their gluten-free goodies and made the day feel like such a celebration. 🎉

A very special thank you to for hosting us and being so gracious and accommodating with your space. 🙏🏻
