So Ill Veggies So Ill Veggies is a non-profit founded to enhance the fresh food accessibility in Southern Illinois. So.

ILL Veggies is committed to addressing the issue of food waste and promoting community well-being by rescuing surplus vegetables and redistributing them to those in need in our communities. By intercepting these surplus vegetables before they reach the waste stream, we will collect and redistribute these rescued vegetables DIRECTLY to individuals in our community. Through partnerships with local farmers, service providers and community organizations we will be able to amplify our impact serving the in need and at risk members of our community. ILL Veggies bridges the gap between surplus vegetables and those in need. We rescue vegetables from farms, markets, and distributors that would otherwise be discarded. These rescued vegetables are then distributed to local communities, ensuring that nutritious food reaches those who need it the most. By focusing on rescuing surplus vegetables and distributing them locally, we not only reduce food waste but also contribute to the well-being of individuals and families by providing essential nutrients while building a network of dedicated individuals to further strengthen the impact of our programs.

Tuesday’s are for Veggies!

Our board member Brittany got to join Mr. Jacob today in the classrooms for the first time and she loved seeing him in his element. The kids LOVE him. He knows them all by name, they stopped him in the hallway, he knew what was going on in their life and kept them engaged in the planting and growing cycle of lettuce. 🥬

The kids ate 6th generation grown watermelons 🍉, picked out the seeds to continue the legacy, planted lettuce, and we carved pumpkins! 🎃 of course we kept the pumpkin seeds 🌱

You remember how fun this was? And it sounded like more people would be interested in Dunking Mr. Jamie!

On October 15th, at the DeSoto Grade School picnic you’ll be able to do just that! We will have a dunk tank and chances to dunk Mr. Jamie to help us buy some new indoor beds, we have out 🌱grown🌱 our current ones!

3 throws - $5
7 throws - $10
15 throws - $20
For $50, I’ll let ya just go push the button… but shhhh don’t tell Jamie!

If you can’t be at the picnic but still want to help support new beds, we will have a link posted soon. And don’t worry, I’ll make sure someone throws a couple for you if you can’t be there! 🌊

Let's end the week with a HUGE thanks to the kitchen team at Elverado CUSD 196 for entertaining our crazy ideas about what nutritious, locally grown school lunches can look like! 🥬🌱

It’s exciting to see microgreens and other locally grown produce making their way into school meals—and even more exciting to see students getting a chance to try something new.

We’re grateful to find partners who are willing to think outside the frozen bag and help us Harvest it. Prepare it. Share it. 💚

🥕🌱 Did you know you can grow veggies in the fall?

In fact, some vegetables actually prefer cooler temperatures! Crops like lettuce, spinach, kale, radishes, and carrots can thrive as the summer heat fades.

🍂 Fall gardening is a great reminder that the growing season doesn’t have to end when summer does. With the right crops, you can keep growing, harvesting, and enjoying fresh produce well into the cooler months.

Did you know? Many leafy greens become sweeter after a light frost because the plants convert some of their stored starches into sugars. 🌱🥬

So we haven't put the beds to bed just yet — there’s still plenty of growing to do! And it's so much more enjoyable when you aren't dripping with sweat! 😅

🌳 Planting for the Future! 🍎🍐

We recently planted fruit trees alongside our high tunnel, adding another layer to what we’re growing and teaching in our community.

Fruit trees take time, but that’s part of the point. They provide food for years to come, create habitat for pollinators and wildlife, and give kids a chance to see firsthand how food grows from a small tree into something they can harvest and enjoy.

We’re not just growing food for today—we’re planting for the future. 🌱
