Thank you Palm Beach County Food Bank for the donation of red kidney beans, ground turkey & pasta sauce. We were able to make up 30 quarts of chili to offer our guests in need for tomorrow lunch.

1 gallon Ronzoni roasted garlic marinara
24 cans red kidney beans
20 lbs ground turkey
Chili seasoning, cumin, garlic & 5 onions

Today's community lunch: Ham, Pea, Mac n Cheese casserole.

Thank you Palm Beach County Food Bank for the donation of the 60 lbs of ham logs & elbow macaroni.

60 lbs. Ham - diced
40 lbs. Elbow macaroni
30 lbs. Fresh frozen peas
35 quarts of cheddar cheese sauce

Made 15 full size pans of the Ham, Pea, Mac n Cheese casserole, plus 1 full pan of vegetarian without the ham.

Super creamy & cheesy.

We made 176 meals and gave out 97 today and the rest will be given out at the food pantry during the week.

Kitchen smelled wonderful and the guests loved the meal.

This past Sunday's community meal was: roasted chicken over rice with red/yellow peppers, onions and fresh tomatoes.

200 chicken thighs (about 170 lbs.)
40 lbs. Red/yellow peppers
32 lbs. Parboiled rice (64 cups)
20 lbs. Onions
15 lbs. Tomatoes

Toss the chicken thighs in canola oil and Dano's Original seasoning. Roast in the oven.

Rice - rinsed until water runs clear. Add 8 cups per catering aluminum pan (making 8 pans), add chicken broth, enough to cover rice by about 3/4 inch, cover tightly and baked 350 for 40 minutes, uncover and add more broth if needed, recover and bake another 20 minutes and rice will be done. Remove cover and allow to cool.

Slice up the peppers, onions & tomatoes, saute over medium heat in a 40 quart pot until the veggies are almost tender. Add a gallon of chicken broth, tons of taco seasoning & cumin seasoning and simmer about 10 minutes. Divide between your 8 pans and toss together.

Let sit in fridge overnight, so the flavors can marry. When you go to heat up, cook the thighs and pour the chicken drippings from the pan into a bowl. Separate the chicken broth from fat and divide over the pans of rice to give them extra flavor.

Grateful to have made 167 meals, we ended up giving out 132 meals in total on Sunday.

Thank you to everyone who ran, walked, volunteered or cheered on the Meals with Meaning - St. Gregory's Episcopal Church team at the Spirit of Giving race this past weekend.
We had an incredible team.
Our own Father Andrew took 1st place in his age group and Maria Rosana Lopez took 2nd place in her age group - way to represent!!!!

How incredible is this? Those in need will now have access to free eye exams & free glasses. As with all of Meals with Meaning programs, it is open to EVERYONE.

At Meals with Meaning, we are proud to serve our community with the help of many partners. On any given Sunday, you will see one of our valued partners serving alongside of us. From iHelp, the medical group, to Yoga instructors and mindfulness breathing coaches, together, we live out our slogan of "Feeding the Mind, Body, and Spirit".

We are happy to announce our latest addition to this community partner list, Glasses for the Homeless. Earlier this month, during our Sunday meal program, we set up a mini eye exam station that included a variety of eyeglasses of all prescriptions. As most of our Meals with Meaning guests do not have vision insurance, this was very well received by our beloved guests. For anyone who has less than 20/20 vision, you know the importance of corrective lenses. This is imperative to navigating safely and efficiently throughout the day.

Once a month, on our very own East Terrace near the butterfly garden, we will now be offering free basic vision exams that result in same-day takeaway glasses. Thanks to Glasses for the Homeless for being part of caring for the most vulnerable in our community. If you or someone you know needs glasses, please note our next month's event is on Sunday, February 8, from 2:00pm to 3:00pm.
