Busy evening in the pizza lab testing flavor combos for the May Pizza Monkey Night. Chive Talkin' starts with a blend of ricotta and chive pesto, topped with thinly sliced and fried potato, our special Parmesan-mozzarella Frankencheese, confit cherry tomatoes, and chive flowers. Plus we made our dough with a sourdough preferment for extra flavor beyond the two-day fermentation. It was tasty! 🍕🐒

Just look at these beautiful mushrooms from . The first are lion's mane and the second are combtooth; both got torn into smaller pieces and sauteed in olive oil. We've picked up lion's mane at and made "crab" cakes that were pretty awesome. The combtooth are new to us, and we set some aside to maybe batter and fry. We also blanched the asparagus, shocked it in an ice bath, and cut it into pizza-friendly slivers. AND we made a gremolata (not pictured) of parsley, garlic confit, and lemon zest/juice. We can't wait to make these pizzas for our guests at Pizza Monkey Night! 🍕🐒
