From bugs to ‘buognese’ to bookshelves. 🦗🍝📚
Back in 2015, Lee Cadesky (Lee Cadesky) came into the TFF community with C-fu FOODS and a wonderfully unconventional question: could insects become the basis for an entirely new category of food?
The answer involved a lot of food science, a cricket-and-mealworm pasta sauce (affectionately dubbed “bugognese”), a startup, an exit, a corporate gig… and a wild life spent questioning what food is, what it could be, and why we eat the things we do.
More than a decade after pitching live at TFF Lisbon, Lee has turned her curiosity about the future of food into a must-read book.
