GARLIC HERB ROASTED CHICKEN WITH POTATOES AND GREEN BEANS. One pan, one hour, the most perfect Sunday dinner

INGREDIENTS:

6 bone-in skin-on chicken thighs (about 2Β½ lbs total)
1Β½ lbs Yukon Gold potatoes, halved
12 oz fresh green beans, ends trimmed
5 tbsp unsalted butter, melted
3 tbsp olive oil
8 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
1 tbsp fresh thyme leaves (or 1 tsp dried)
1 tsp dried Italian seasoning
1Β½ tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
Juice of 1 medium lemon (about 2 tablespoons)
Fresh chopped parsley for garnish

DIRECTIONS:

1. Preheat your oven to 425Β°F. Line a large rimmed baking sheet with parchment paper for easy cleanup.
2. In a small bowl, whisk together the melted butter, olive oil, all of the minced garlic, chopped rosemary, thyme leaves, Italian seasoning, salt, pepper, smoked paprika, garlic powder, onion powder, and lemon juice until everything is well combined into a smooth, fragrant garlic herb butter mixture.
3. Pat the chicken thighs very dry on all sides with paper towels. Dry skin is essential for achieving crispy results. Place the chicken in a large bowl and pour about half of the garlic herb butter mixture over them. Toss and rub the seasoned butter all over the chicken, making sure to get some under the skin as well for maximum flavor.
4. In a separate large bowl, combine the halved potatoes and trimmed green beans. Pour the remaining garlic herb butter over the vegetables and toss until everything is evenly and generously coated.
5. Spread the potatoes cut-side down on the prepared baking sheet. This ensures the flat side gets crispy and caramelized during roasting. Scatter the green beans around and between the potatoes in the gaps.
6. Arrange the seasoned chicken thighs skin-side up on top of and around the vegetables. The chicken juices and butter will drip down onto the vegetables as everything roasts together, adding incredible flavor.
