During the harshest pioneer winters in the Appalachian mountains, a desperate father would wade into the freezing snow. With a heavy iron mattock, they would brutally chop through thick, sharp brambles to unearth a dark, twisted root from the frozen earth.

They scrubbed the frozen mud away and dropped the fibrous roots into a boiling, rusted tin pot over an open fire.

Here's what most people don't know... they didn't dig these up for food.
