Course 3: Chinese XO noodles 🥡
❌⭕️ sauce is a hodgepodge mix of unusual and pricey ingredients that takes days to make. It originated in the Hong Kong peninsula at a hotel in the 1980s and is widely known as China’s favorite chili sauce. XO is a staple of southern Chinese cuisine 💥
Our ❌⭕️ sauce for the beef noodle dish is a sweet & spicy umami bomb 💣 that consists of dehydrated shrimp, bay scallop, salted cod and fried Chinese sausage — then we stir fry the sauce w/ noods & top it off with some sticky braised short ribs!!

For the vegan, gluten-free ❌⭕️ sauce we blended an assortment of fried and dehydrated mushrooms, nori, garlic and sesame 🥢 To finish, the noods are topped with bean sprouts and chunks of meaty caramelized maitake mushrooms!
