Uncle Foods Diner Sponsored by Peace House: www.peacehouse.net Uncle Foods always needs new volunteers, for both cooking and serving food.

If you're over 17, enjoy cooking, and know how to chop vegetables, please call or email us about volunteering for kitchen prep. We prep between 1:30 and 4 pm every Tuesday. If you'd prefer to serve our hot entrees, salads or desserts, please contact us for further information about serving positions. Volunteer servers arrive between 4-4:15, and generally work until 5:30-6. Volunteering is not only fun but extremely rewarding! It's one of the best 1-2 hours you can give to your community.

22,500 meals to hungry folks since March 24th. The food is mosty organic and with a big focus on real nutrition. With the latest grant from the City of Ashland we are guaranteed to continue serving four days a week until at least March 31st. We are so blessed and our team is so dedicated.

When you buy a locally raised beef from the butcher it dresses out to about 700 pounds and costs about $2.42 a pound, including carcass purchase, kill fee, cut & wrap and quick freeze. Where can you buy any meat for that price? Always buy locally raised meat from your local butcher shop. Southern Oregon Fine Meats, Eagle Point Meats, Cartwright, etc. I am not recommending any one particular shop. And halves and quarters are also available. There will be meat for every budget.

A favorite dish of the hungry we serve.

BREAD AND BUTTER PUDDING

On old favorite of mine from when I was a child.

BREAD AND BUTTER PUDDING

INGREDIENTS:
1 teaspoon ground cinnamon
1/4 cup sugar
4 Tablespoons butter or margarine, more or less as needed, at room temperature
5 slices crust-on white bread
1/2 cup raisins...
2 cups milk
2 eggs

DIRECTIONS:
*Preheat oven to 350 degrees F./180 C
*Add cinnamon to sugar in cup and mix well.
*Set aside.
*Generously spread one side of each piece of bread with butter or margarine.
*Cutting diagonally, slice each in half.
*Arrange triangle slices in pan, slightly overlapping, with butter-side
up and cut edges facing the same direction, making a spiral.
*As you add the bread, sprinkle with sugar, cinnamon, and raisins.
*Put milk in small bowl, add eggs, and using whisk or fork, mix to blend well.
*Pour milk mixture over bread and raisins in baking pan.
*Set aside for about 15 minutes for bread to absorb liquid.
*Bake in oven for about 30 minutes, or until top is golden brown.
*Serve the pudding while still warm in individual dessert bowls.
*It is eaten plain or with cream poured over it.
