Why do we love this Weekend Chili for people affected by pancreatic cancer?

Each serving provides 27 grams of protein from lean ground turkey, beans and bone broth. Protein is especially important during treatment and recovery because it helps support muscle maintenance, strength and tissue repair.

This balanced bowl also offers carbohydrates for energy, nourishing fats and fiber from beans and vegetables when tolerated. Best of all, the chili can be made ahead, frozen in individual portions and reheated on days when cooking feels difficult.

Per serving: 295 calories | 27 g protein | 28 g carbohydrates | 9 g fat | 7 g fiber

Individual needs and tolerances can vary throughout treatment. Talk with your medical team or registered dietitian about the foods that are right for you.

Getting Ready for the Penn State Watch Party

Matt Crosby and Chef Gia are getting ready for game day in the Care Kitchen!

Together, they are making Weekend Chili the perfect warm and comforting recipe to serve while cheering on Penn State. Visit https://carekitchen.org/recipes/weekend-chili/ for the recipe.

It is also a delicious preview of the community and Penn State spirit coming together on October 17 for the second annual Blue, White & Forever Bright Pancreatic Cancer Fundraiser and Watch Party, hosted by Matt in honor of his wife, Diane.

The event will help raise funds for patient programs offered by the Seena Magowitz Foundation. Patients and caregivers never pay for the programs or support they receive.

Make the chili. Join the watch party. Help Matt continue Diane’s legacy by making a difference for families affected by pancreatic cancer.

One recipe. So many ways to make it your own.

Our Weekend Chili provides a nourishing base that can be customized to match your tastes, appetite and nutrition goals.

Want to add calories and healthy fats? Top your bowl with avocado, shredded cheese, full-fat Greek yogurt or a drizzle of olive oil.

Need more protein? Add extra ground turkey, Greek yogurt or cheese.

Prefer a milder flavor? Reduce the chili powder and smoked paprika.

Have a smaller appetite? Start with a smaller portion and add calorie-dense toppings to get more nourishment without significantly increasing the volume.

Need less fiber? Beans and vegetables may be difficult to tolerate at certain points during treatment. Consider choosing one of Care Kitchen’s lower-fiber recipes made with pasta, rice or another easier-to-tolerate carbohydrate.

At Care Kitchen, we believe a recipe should work for you not the other way around.

Meet Our Guest, Matt Crosby

A very special guest is joining Chef Gia in the Care Kitchen.

Matt Crosby was a devoted caregiver to his wife, Diane, during her journey with pancreatic cancer. Since Diane’s passing in December 2024, Matt has continued to honor her life by helping other patients and caregivers receive the support they need.

In our upcoming episode, Matt brings his warmth, humor and caregiver perspective to the kitchen as he and Chef Gia prepare a comforting Weekend Chili.

Why We Love This Week's Recipe for Pancreatic Cancer Patients
This comforting chicken dinner delivers 35 grams of protein per four-ounce serving when enjoyed without the skin. Protein is especially important during cancer treatment because it helps support strength, maintain muscle and repair body tissue.
The recipe is also easy to make and personalize. Patients who have difficulty tolerating higher-fat foods can remove the skin after cooking and enjoy the chimichurri on the side. Its fresh herbs, garlic and vinegar add bright flavor, which may be appealing when taste or appetite changes make eating more difficult. Visit the website Carekitchen.org for more information.
