THE WORST THING

The worst thing you can be is not fat,
or ugly,

is locked in a prison of your own self-doubt,
riddled with insecurities,
afraid to venture out into this life,
lest the world see who you really are.

is someone else.

Soup in summer?! Wait, hear me out! I get waaaay less motivated to cook the farther we get into summer. I start reaching for easy stuff like sandwiches, canned soup, boxed mac & cheese, etc. So what I’ve started doing is waiting for a rainy day and making soup for the freezer.

Because we like dunking peanut butter and jelly (or honey) sandwiches in our vegetable beef soup, this is one I make first! ‘Soup and a sandwich’ feels less like cold weather food than soup with cornbread or anything hot.

I freeze the soup in 1 and 2 person servings then warm up however I need at a time (the Hillshire Farms deli meat containers with the red lids are perfect for this btw!). It’s the easiest thing in the world for putting a healthy meal on the table with very little effort!
