Watch Sylvia, founder of Pilar’s Foundation and the heart behind Pilar’s Tamales, prepare her famous horchata - a process that takes hours of toasting rice, amaranth seeds, Mexican cinnamon, sesame seeds, and nutmeg, followed by an overnight soak, grinding, and finishing with brown sugar and vanilla.
