My yard has lots of this, but it never occurred to me to eat it.

My yard has lots of this, but it never occurred to me to eat it.

Henbit (Lamium amplexicaule) is another early edible showing up right now at the edges of lawns or on the sunny side of buildings. Like many in the Mint family, it has a distinctly square stem that is tinted purple with opposite growing pairs of leaves that appear whirled around the stem (compare it to Dead Nettle shared earlier in the week). Both the leaves and flowers are edible. Unlike some early spring greens which can be bitter, henbit is on the mild side. It is great tossed raw in sandwiches, diced in salads, sautéed and added to pesto. You can also toss while stems into pickle brine for an easy snack! Add to it, the pretty little flowers make lovely additions to any dish!

Happy Foraging Friends!

In this hands-on course, we will explore various composting techniques, including outdoor piles, countertop dehydrators, and vermicomposting. We will cover what can and cannot be composted and how to create and maintain a perfect balance of greens and browns.

Each participant will create their own vermicomposting system to take home. Come learn the magic and science of how to transform kitchen scraps and yard waste into nutrient-rich gold for your plants!
