🌱✨ Big news from FoodCorps New Mexico! ✨🌱

We are thrilled to announce our new partnership with Albuquerque Public Schools (APS)! 🎉

Over the past few weeks, we’ve been hard at work preparing our amazing cohort of four School Nutrition Support Specialists to connect with students across elementary schools throughout the district!

From elevating student voices to creating exciting and meaningful school food experiences, we can’t wait to see the impact this team will make. 🥕

We are so excited for this new chapter and all the opportunities ahead to help students connect with and enjoy nourishing, delicious school meals!

Taste Test Tuesday! 💚💜

LaSon Caté at San Felipe Elementary led a fun taste test with the whole school! Students paired their yummy green chile enchiladas with a taste of prickly pear juice from .

The students really enjoyed trying the delicious juice and even got to vote on whether it’s something they’d like to see on the school menu in the future!

We love giving students the opportunity to try new flavors and have a voice in what could be served in their cafeteria.

🌶️🍅 Family Engagement Friday! 🍅🌶️

San Felipe families participated in a fun salsa-making class with Cotton Blossom Gardens, led by Janice! Families made fresh salsa using produce grown right in Janice’s garden in Isleta Pueblo.

The salsa was delicious, and a little spicy because those jalapeños had a good bite to them! Food Educator LaShon Cate led a taste test, and the votes were in: 9 loved it, 0 liked it, and 0 were still deciding!

Each family also got to take home a container of freshly made salsa to enjoy later.

It was a wonderful Family Engagement event! 💚

What happens when Oregon, California, and New Mexico all get together for a week-long training? A whole lot of learning, sharing, tasting, and cooking!🥕

We spent the week together in Portland for orientation, getting to know each other and learning from one another. From prepping for taste tests to practicing cooking with kids, we had plenty of opportunities to try things out, share ideas, and build our teaching skills together.

It was such a fun week, and we’re leaving feeling ready and excited to get into our schools and start teaching our students!🌱

🥕 Students at San Felipe Elementary made a delicious carrot top pesto with FoodEd member LaShon using fresh carrots from Black Mesa Farms!

Before cooking, students closely observed the carrot tops and discovered that each carrot was unique in its shape, size, and appearance. They practiced their observation skills by drawing the carrots they studied and sharing what made each one special.

The best part? Tasting their creation! The carrot top pesto pasta was a huge hit, and students got to vote on what they thought of the recipe. The results were in: a 10/10 from many happy taste-testers!

Learning, creativity, and fresh local food made for a memorable day in the classroom. Thank you to Black Mesa Farms for helping connect students to where their food comes from! 🥕✨

Taste Test Tuesday!

Our SNSS, Deana, recently led a Nuevo Thursday Taste Test with students at Columbia Elementary School featuring a fresh and flavorful Desert Sunset Salad! This colorful recipe included:
🥕 Carrots from Anthony Youth Farm
🌱 Locally sourced beets from De Colores Farms and Foods
✨ Jicama, basil, lime juice, sunflower seeds, salt & pepper

Students voted by selecting whether they tried it, liked it, or loved it, and the results are in!

🎉 Total Participants: 377 students!

We love seeing students explore fresh, local ingredients and discover new favorite flavors through hands-on taste testing opportunities!

Family Engagement Friday! 🧀

San Felipe Pueblo Elementary School hosted a wonderful family engagement event featuring the New Mexico Cheese Guild! Families and students learned about the origins, craftsmanship, and brilliance of cheese while tasting some delicious varieties, including 1605 Manchego, Meredith Sheep and Goat, and Prairie Breeze.

Students at Berino are getting the garden prepped and ready to build healthy soil with Ms. Abi! 🌱 They added fresh compost and introduced worms 🪱 to help enrich the soil.

They also discovered some huge vegetables that had to be pulled from the garden because the heat and they had become too overgrown. Unfortunately, they were too bitter to eat, but it was fun to see just how big the beets and carrots had grown! 🥕
