We are getting ready for the season: The dogs are ready for garden time.

Lemon–Chili Honey Sunshine Jam 🍯✨
Bright, zesty, sweet heat in a jar—this golden jam bursts with citrusy sunshine and a spicy chili kick!

Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Yield: 2 cups

Ingredients:
* 2 lemons (zested and juiced)
* 1/2 cup honey
* 1/2 cup sugar
* 1/4 cup water
* 1/2 teaspoon chili flakes (adjust to taste)
* 1/4 teaspoon cayenne pepper (optional for extra heat)
* 1/2 teaspoon grated ginger
* Pinch of salt
* 1 teaspoon cornstarch (optional, for thickening)
* 1 tablespoon water (for cornstarch slurry)

Instructions:
1. In a saucepan, combine lemon juice, zest, honey, sugar, and water.
2. Bring to a gentle simmer over medium heat, stirring occasionally.
3. Add chili flakes, cayenne (if using), ginger, and salt.
4. Simmer for 10–15 minutes until slightly thickened and glossy.
5. (Optional) Stir in cornstarch slurry and cook for 1–2 minutes until thick.
6. Remove from heat and let cool—it will thicken more as it sits.
7. Transfer to a jar and refrigerate.

Pro Tip:
This jam is amazing drizzled over grilled chicken, shrimp, or even biscuits—sweet heat with a citrus punch!

Coconut-Lime Pineapple Heat Preserve 🌶️🍋

A tropical-sweet pineapple preserve with creamy coconut, bright lime, and a gentle chili heat—perfect for glazing meats or spreading on everything 😍

Prep time: 15 minutes
Cook time: 35 minutes
Total time: 50 minutes
Yield: About 3 cups

Ingredients:
* 4 cups fresh pineapple, finely chopped
* 1 cup granulated sugar
* ½ cup coconut sugar or brown sugar
* ½ cup full-fat coconut milk
* Zest of 2 limes
* ¼ cup fresh lime juice
* 1–2 jalapeños, finely minced (seeds removed for mild, kept for heat)
* ½ tsp salt
* ½ tsp crushed red pepper flakes (optional, for extra heat)
* 1 tsp vanilla extract
Instructions:
1. Add pineapple, granulated sugar, coconut sugar, lime zest, lime juice, jalapeños, salt, and red pepper flakes to a heavy-bottom saucepan.
2. Bring to a gentle boil over medium heat, stirring often.
3. Reduce heat and simmer 20–25 minutes, stirring frequently, until pineapple breaks down and mixture thickens.
4. Stir in coconut milk and continue simmering 8–10 minutes until glossy and jam-like.
5. Remove from heat and stir in vanilla extract.
6. Let cool slightly—the preserve will thicken more as it cools.
7. Transfer to clean jars and refrigerate.

Pro Tip:
This preserve is amazing brushed onto grilled chicken, shrimp, or pork—or served with cream cheese and crackers for a sweet-heat appetizer 🌴🔥

Good morning,

It's a big weekend here on the ranch. 3 moms and all their babies headed for fosters.

We have 22 babies and 3 adults headed for rescues to find their forever families.

We have van rental fees, fuel, one night of lodging, and health certificates to fund so they can get on their freedom ride this Saturday.

Our goal is $1100 for everything needed to get them safely to their fosters.

That's $50 for each pup. We can all do this together.

What's happening on the homestead: You'll start seeing posts about the homestead. A new canine lifestyle.

🍇🌶️🔥 Blackberry–Chipotle Sweet Heat Jam 🍯✨
A bold, sticky-sweet jam with juicy blackberries and smoky chipotle heat — perfect for glazing, spreading, or dipping 😍
Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes
Yield: About 1 1/2 cups jam
Ingredients:
* 2 cups fresh blackberries
* 1/2 cup sugar
* 1/4 cup honey
* 1–2 chipotle peppers in adobo, finely minced
* 1 tablespoon adobo sauce (from the can)
* 1 tablespoon lemon juice
* 1/2 teaspoon apple cider vinegar
* Pinch of salt
Instructions:
1. Add blackberries to a saucepan over medium heat and cook until they begin to burst, about 5 minutes.
2. Gently mash the berries with a spoon or potato masher.
3. Stir in sugar, honey, chipotle peppers, adobo sauce, lemon juice, vinegar, and salt.
4. Bring mixture to a gentle boil, then reduce to a simmer.
5. Simmer uncovered for 20–25 minutes, stirring often, until thick and jammy.
6. Taste and adjust sweetness or heat as needed.
7. Remove from heat and let cool slightly — jam will thicken more as it cools.
8. Store in a sealed jar in the refrigerator for up to 2 weeks.

Let's start our day with a positive homestead post. This is how we'll be fundraising moving forward. Our canines will be in the books too as cartoons. 🙂

These books are for kids and adults, alike. Grandparents and parents spending time teaching their children how to garden and read at the same time. How cool is this?

For the past two years we've been writing step by step books about homesteading. From container growing to gardens and a few recipes.

🥔 Step-by-Step: How to Grow Potatoes: Instructions, Recipes, and a Generational Story.

But this is not your typical potato book. Our books are story tellers too. We want kids to know about the potatoes. Like, did you know potatoes generate electricity?

Price for a color printed book will be $17.95 plus shipping. The girls are printing and binding the books all this week, and they are up on our Etsy sites now, links at the bottom of post.

For those wanting a healthier lifestyle, and wanting to grow veggies and fruits for yourself, this would be the perfect way to get started.

We will not be sharing what's in our books, you'll need to buy it to find out.

We are coming up on our 2nd year anniversary here in NM. Feb is not only the begging of Spring, it is the season to get your supplies and start your garden journey.

Good evening Woofers!
Was a very busy day here on the ranch. We're getting ready for the fruit and nut tree's that we'll be planting this Spring. Alot of debris and weeds cleared out today, as you can see by all those bags. So much to do to get ready and as always so little time, or that's how it seems. I can't wait till things start blooming and showing us the "fruits" of our labor bwahahahahaha, get it, fruits of our labor. Anyways, things are moving right along, and we're glad you're here to see what we're doing!

This weekend the weather is going to be absolute chaos in some parts of the country. If you're in an affected area, please take precautions and make sure your emergency lamps and things are charged up. Generator's with back up fuel, things from the store are stocked up, it's going to be wicked!
Here on the ranch we'll be having our own issues, as Ty posted this morning already:
It's going to be a brutal ugly weekend and we now have 1-3in snow in our forecast here on the ranch.
Sara and I will be doing memes about life as we battle the weather.
"One person's anxiety, is another person's peace and calm".
As Ty posts I will share here also, need some light heartedness on top of what's actually happening with this storm lol
