Violations Noted:
• A live pest was observed in the dish area. Management was instructed to increase pest control measures, and the health department will conduct a follow-up check. (3 points)
• Cooked chicken wings were stored directly above raw chicken wings in the walk-in cooler, creating a cross-contamination risk. The items were reorganized during the inspection. (9 points)
• The deli slicer was not being cleaned at the required frequency and had visible buildup. The slicer was removed for cleaning during the inspection. (4 points)
• The ice machine and ice bin were not being cleaned often enough and had visible accumulation. (4 points)
• The mechanical dish machine was not dispensing sanitizer properly and tested at 0 ppm chlorine. Staff were instructed to use the three-compartment sink until repairs are made. A follow-up check is planned. (4 points)
• No paper towels were available at the hand sink in the dish area. Towels were provided during the inspection. (4 points)
